Coconut Jam Thumbprints

I make these every year and every year my friends ask for the recipe. They are easy to make and quite addicting. I got this recipe from the Barefoot Contessa Family cookbook. She is one of my favorite tv cooks. I have several of her books and am rarely disappointed with a recipe I've used. Try these delish cookies and let me know what you think. They would be a great hostest gift for New Years eve or day party.

Preheat the oven to 350 degrees F.
In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

  1. I'm with you - her recipes work, and isn't that refreshing? It bothers me when I go to the effort and expense to make something and the recipe does not work.

    I have really enjoyed my first visit to your site. You have selected some really great topics, and your photos are terrific. It is a pleasure to read your writing. Nice flow. I do want to comment about some of your pix - the ones you have taken that are "in progress" - like the cookies all portioned out on parchment with the disher (ice cream scoop) next to them, and the one of the apple peeler with the peelings are particularly effective. They are natural and attractive. So I say BRAVA!! Rock on and keep up the really cool work. I look forward to many more visits.

    1. thank you so very much for the wonderful comment. I work very hard on my photos and when you submit 26 photos to food gawker and only 2 get approved I start to doubt what I am doing. I appreciate you taking the time to write your thoughts. Now I am off to visit your blog. :)

  2. These look fantastic! I just learned these types of cookies were called "thumb print". I agree - her recipes in general do work very well. Loved my first visit to your website!
